Weekly Menu Rundown

TGIF!


I’m always looking for meal ideas. Who wants to or can afford to eat out all the time?! So, my plan is to start sharing our weekly menus with y’all and I’d love it if you send me some of your favorites!


I’m not only posting to share, but to remember what we’ve done, and what was a hit and what wasn’t. It’s for me too, y’all 😉


Sunday:

•Breakfast: Buttermilk Pancakes, eggs, and bacon. Strawberries on the side. (Link to pancake mix, I make a large batch so we have it ready to go, I do like my batter thicker, so I don’t add as much liquid.) https://heatherlikesfood.com/make-ahead-buttermilk-pancake-mix/

Lunch: Taco Salads with leftover taco meat from Friday.

•Supper: Smoked Pork Loin with mashed potatoes and roasted broccoli


Monday:

• Breakfast: leftover pancakes and sausage, with cotton candy grapes for the boys; fruit and yogurt with granola for the hubs.

Lunch: I can’t remember 🫣🥴🤷🏼‍♀️

  • Cheese with Alfredo sauce instead of marinara

  • Supreme - Italian sausage, pepperoni, red bell peppers, black olives, red onions, mushrooms


Tuesday-

•Breakfast- Eggs and Toast with fruit

Lunch- leftover pizza, grapes and yogurt or cottage cheese. Baby Bell cheese and peanut butter pretzels.

•SupperBLT’s OR Club Sandwiches optional Avacado, with homemade fries in the air fryer . Deviled eggs, because I had boiled eggs that needed to be used.



Wednesday-

Breakfast: Fruit/Yogurt Parfaits with granola

Lunch: Sandwiches, chocolate covered almonds, cheese stick, apple slices and some other random snacks.

•Supper:Party Sandwiches

I cook at our church with a couple of other ladies on Wednesday’s and this week’s we had super easy party sandwiches.


🥪 You’ll need:

•Hawaiian Rolls

•Ham and/or Turkey lunch meat

•Cheese (we used shredded mozzarella this time)

•Butter

•Mustard

•Worcestershire Sauce

•Honey

•Garlic and Onion Powder

•Pepper

•assemble sandwiches in baking dish, melt butter and mix in other ingredients (below mustard) I don’t measure, it’s just to taste. Then, pour butter mixture over sandwiches, cover with foil and put in preheated oven at 425 for about 15-20 minutes or until it’s heated through. We did heat the lunch meat before assembly, to speed up the process.

Another variation is pizza party sandwiches. They are so good!


Thursday:

Breakfast: Scrambled Eggs with ham and cheese, toast and fruit.

Lunch: Leftovers with a hardboiled egg, cottage cheese, cashews and cotton candy grapes

•Supper: Cranberry, Almond, Feta and Chicken Salad with Balsamic Italian Dressing. (this is my hubby’s fave and he’s not a salad person) We had something similar at a restaurant years ago and I had to recreate it.

It’s simple- just roasted or grilled chicken, sliced. Place on a bed of romaine lettuce and spinach. Top with feta crumbles, slivered almonds (I used honey roasted this time), red onions and dried cranberries. Drizzle on your Balsamic Italian Vinaigrette (I used one packet of Italian dressing mix, Avacado oil and balsamic vinegar & mixed in a mason jar.). Enjoy!


Friday:

•Breakfast: Free for all, most likely, eggs and some kind of meat.

Lunch: pimento cheese sandwiches with fruit, maybe some chips

Supper: We will be having Hawaiian BBQ pulled pork with the leftover pork loin with baked potatoes and salad.


Saturday:

•Breakfast: Hubs usually makes breakfast on Saturday mornings, it’s typically French toast and is really good!

Lunch: unsure, but will find something on the fly.

•Supper Cheeseburgers and homemade fries (all the way, of course!) I’m going to make burger buns this go round, the last few times we’ve bought any they have fallen apart and are not so good).
